KEFIR

Kefir is my favorite fermented food because it helped me heal my gut. It's a cultured or fermented milk product made with any kind of milk and kefir grains left on the counter for 12-24 hours. It's tangy and sometimes a little fizzy. Homemade kefir is a powerful probiotic that contains at least 30-56 different strains of bacteria to help keep your gut happy and healthy. One serving of kefir can contain a healthy portion of protein as well as vitamins A, B, C and K and phosphorous. It's also packed with nutrient boosting enzymes and very low in sugar and lactose.

SOURDOUGH

Definitely my second favorite fermented food. Who doesn't love a warm piece of fresh bread slathered with butter! For thousands of years people have been mixing flour and water, setting it aside to rise before baking it, and producing a food that nourished and sustained millions of families. A properly fermented whole grain loaf of bread boasts a long list of nutrients including fiber, protein, B vitamins, magnesium and more. It's also low in sugar and a great source of healthy carbs.

FERMENTS

Fermentation is the oldest method used for naturally preserving food. Fermented food not only retains its original texture, but the nutritional benefits are actually greatly increased. It also essentially predigests the food making its nutrients more accessible to our bodies. One spoonful of fermented vegetables contains billions of probiotics, which support and promote a healthy gut.
